There are at least four ways to get Winiarski institutional stoves with chimneys (50% to 60% thermal efficiency) into use. The stoves are well known and generally have a good reputation. We very much prefer stoves with chimneys! With maintenance, the inexpensive chimney can protect cooks, keep the kitchen cleaner, etc.
- Shell Foundation supported the making of a step-by-step video guide to making institutional stoves with a metal Rocket combustion chamber. It is a great stove with lots of successful field-testing, but it can be costly because heat resistant metals are increasingly expensive. - The book Cooking With Less Fuel: Breathing Less Smoke shows how to make the same institutional stove using bricks for the Rocket combustion chamber. We wrote this book with the UN School Feeding Program in Rome. This is a less expensive stove that is less fuel efficient at cold start, but can be easier to make.
- Making a VITA style institutional stove without a Rocket combustion chamber is the least expensive way to go. The open fire under the pot is supported on a grate and the hot gases flow up the inside of the skirt, down the outside and then exit out the chimney placed below the bottom of the pot. You can find a video about constructing a VITA stove at: https://aprovecho.org/video-gallery
- Purchase a stainless steel up-to-specs 100L or 200L stove from SSM or BURN with warranty. Prices seem to be coming down.
